Watermelon Rind Candy?
When I was a young lad, (oh, so long ago!) my mother used to take the watermelon rinds left over from our summer picnic and make candy out of them.
It was incrediably delicious, very sweet, and we canned them in a GREEN syrup, which made the rinds also very Emerald Green.
